Method for red sauce pasta recipe at home

  • put all the tomatoes for blanching and then after blanching peel them remove seed then chop them.
  • After that take a pan and heat olive oil in it , then add chopped onion and garlic in it.
  • Then add the chopped tomatoes in it and cook for 2 min.
  • Then add tomato puree in it and cook for 2 min .
  • After that add salt and chilli flakes to it as per taste .
  • You can also add dried origano a little basically its optional.
  • Finally puree the mixture in a grinder and the strain the puree to get a creamy sauce.
  • Then adjust the seasoning with salt and pepper according to the taste.

  • Heat a pan and add butter to it, when the butter is melted add all purpose flour to it.
  • Now cook the butter and flour mixture which is known as roux so that the raw flavour does not exist and the colour of the roux does not change it should stay white in colour.
  • Then add the cool milf to the flour and whisk it properly.
  • Add salt and pepper according to the preference.
  • Finally, white sauce is ready for the pasta.

Here is a tip that the ratio of flour, butter and milk should be in the ratio 1:1:10. Also while adding milk to the cooked flour one should be cool and other should be warm.
